Citrus Fruit And Soya Bean Salad With Yoghurt Dressing

Preparation time approx. 15 minutes
Ingredients:
- 1kg Birds Eye Foodservice Soya Beans
- 400g orange segments
- 400g ruby grapefruit segments
- 180g low fat yoghurt
- Chopped coriander
To prepare:
- Cook the Foodservice Soya Beans as per pack instructions and cool.
- Mix the beans with the orange and grapefruit
- Finely chop the coriander and add to the yoghurt
- Arrange the fruit and vegetables on a plate and serve with the yogurt and coriander dressing.
