Citrus Fruit And Soya Bean Salad With Yoghurt Dressing

Preparation time approx. 15 minutes

Ingredients:

  • 1kg Birds Eye Foodservice Soya Beans
  • 400g orange segments
  • 400g ruby grapefruit segments
  • 180g low fat yoghurt
  • Chopped coriander

To prepare:

  1. Cook the Foodservice Soya Beans as per pack instructions and cool.
  2. Mix the beans with the orange and grapefruit
  3. Finely chop the coriander and add to the yoghurt
  4. Arrange the fruit and vegetables on a plate and serve with the yogurt and coriander dressing.
