Petis Pois, Tuna And Rice Salad

Preparation time approx. 30 minutes
Ingredients:
- 50g red pepper, finely sliced
- 50g yellow pepper, finely sliced
- 50g green pepper, finely sliced
- 260g tomatoes, chopped
- Handful fresh coriander, chopped
- 500g cooked rice
- 500g cooked Birds Eye Foodservice Peas
- 650g tinned tuna in Water
- 2 tablespoons red wine vinegar
- Juice of a lime
- 3 tablespoons olive oil
- Freshly ground black pepper
To prepare:
- Mix the peppers, tomatoes, coriander, rice and peas together.
- Add the strained tuna.
- Dress with the vinegar, lime juice and oil, and season.
- Mix gently and serve.
