Petis Pois, Tuna And Rice Salad

Preparation time approx. 30 minutes

Ingredients:

  • 50g red pepper, finely sliced
  • 50g yellow pepper, finely sliced
  • 50g green pepper, finely sliced
  • 260g tomatoes, chopped
  • Handful fresh coriander, chopped
  • 500g cooked rice
  • 500g cooked Birds Eye Foodservice Peas
  • 650g tinned tuna in Water
  • 2 tablespoons red wine vinegar
  • Juice of a lime
  • 3 tablespoons olive oil
  • Freshly ground black pepper

To prepare:

  1. Mix the peppers, tomatoes, coriander, rice and peas together.
  2. Add the strained tuna.
  3. Dress with the vinegar, lime juice and oil, and season.
  4. Mix gently and serve.
