Pea, Soya Bean And Potato Salad

Preparation time approx. 15 minutes
25 minutes to cook
1 hour to marinate

Ingredients:

  • 1kg baby new potatoes
  • 400g Birds Eye Foodservice Peas
  • 400g Birds Eye Foodservice Soya Beans
  • 4 sweet pickled gherkins, sliced
  • 8 salami slices, shredded
  • 2 medium red onions, finely chopped
  • 6 tablespoons olive oil
  • 4 tablespoons gherkin juice
  • 2 teaspoons English mustard
  • Freshly ground black pepper

To prepare:

  1. Cook the potatoes, drain and slice.
  2. Cook the Peas and Soya Beans according to on pack instructions
  3. Mix the potatoes, peas, beans, gherkins and salami together.
  4. Make a dressing with the remaining ingredients, season and leave for 1 hour to marinate.
  5. Place in a bowl and serve.
