Pea, Soya Bean And Potato Salad

Ingredients:
- 1kg baby new potatoes
- 400g Birds Eye Foodservice Peas
- 400g Birds Eye Foodservice Soya Beans
- 4 sweet pickled gherkins, sliced
- 8 salami slices, shredded
- 2 medium red onions, finely chopped
- 6 tablespoons olive oil
- 4 tablespoons gherkin juice
- 2 teaspoons English mustard
- Freshly ground black pepper
To prepare:
- Cook the potatoes, drain and slice.
- Cook the Peas and Soya Beans according to on pack instructions
- Mix the potatoes, peas, beans, gherkins and salami together.
- Make a dressing with the remaining ingredients, season and leave for 1 hour to marinate.
- Place in a bowl and serve.
