Pea Pear And Watercress Soup

Serves: 10
Preparation time approx. 30 minutes
1-2 hours to chill

Ingredients:

  • 4 medium onions, chopped
  • 70g butter
  • Salt
  • 1kg Birds Eye Foodservice Peas
  • 6 pears, peeled and chopped
  • 2 litres vegetable stock
  • 2 bags (160g) fresh watercress

To prepare:

  1. Sweat the onions in butter with a pinch of salt.
  2. When soft, add peas and pears.
  3. Sauté for 2–3 minutes.
  4. Add stock then simmer for 5 minutes.
  5. Liquidise until smooth then chill.
  6. When cold add watercress and liquidise, then strain through a sieve for a fine consistency.
