Pea Pear And Watercress Soup
Serves: 10
Preparation time approx. 30 minutes
1-2 hours to chill
Ingredients:
- 4 medium onions, chopped
- 70g butter
- Salt
- 1kg Birds Eye Foodservice Peas
- 6 pears, peeled and chopped
- 2 litres vegetable stock
- 2 bags (160g) fresh watercress
To prepare:
- Sweat the onions in butter with a pinch of salt.
- When soft, add peas and pears.
- Sauté for 2–3 minutes.
- Add stock then simmer for 5 minutes.
- Liquidise until smooth then chill.
- When cold add watercress and liquidise, then strain through a sieve for a fine consistency.
