Pea And Ham Soup
Serves: 10
Preparation time approx. 40 minutes
Ingredients:
- 2 carrots, chopped
- 2 onions, chopped
- 1 leek, chopped
- 3 bay leaves
- 3 litres vegetable stock
- 400g Birds Eye Foodservice Peas
- 400g cooked chopped ham
- Freshly ground black pepper
- Fresh parsley, chopped, to serve
To prepare:
- Cook the carrot, onion, leek and bay leaves in the vegetable stock until the vegetables are soft.
- Add the peas and bring back to the boil.
- Remove from the heat and blend in a liquidiser until smooth.
- Reheat gently, add the ham and season to taste.
- Serve sprinkled with parsley.
