Pea And Ham Soup

Serves: 10
Preparation time approx. 40 minutes

Ingredients:

  • 2 carrots, chopped
  • 2 onions, chopped
  • 1 leek, chopped
  • 3 bay leaves
  • 3 litres vegetable stock
  • 400g Birds Eye Foodservice Peas
  • 400g cooked chopped ham
  • Freshly ground black pepper
  • Fresh parsley, chopped, to serve

To prepare:

  1. Cook the carrot, onion, leek and bay leaves in the vegetable stock until the vegetables are soft.
  2. Add the peas and bring back to the boil.
  3. Remove from the heat and blend in a liquidiser until smooth.
  4. Reheat gently, add the ham and season to taste.
  5. Serve sprinkled with parsley.
