Couscous And Pea Salad

Preparation time approx. 15 minutes
Ingredients:
- 500g dried couscous
- 500g Birds Eye Foodservice Peas, cooked and chilled
- 1 large onion, finely chopped
- 5 tablespoons fresh lemon juice
- 5 medium tomatoes, skinned, deseeded and chopped
- 4 tablespoon fresh parsley, chopped
- 4 tablespoons olive oil
- Freshly ground black pepper
To prepare:
- Soak the couscous in 250ml boiling water for 5-10 minutes (or as on pack)
- Drain the couscous well and mix with the remaining ingredients. Season to taste and serve.
