Chicken Dipper Salad

Preparation time approx. 45 minutes
Ingredients:
- 60 Birds Eye Foodservice Chicken Dippers
- 500g mixed salad leaves
- 30 cherry tomatoes, cut in half
- 2 cucumbers, cut into chunks
- 4tbsp Parmesan (optional)
Dressing
- 12 olives, sliced
- 2 tbsp capers, rinsed (optional)
- 60ml (4tbsp) olive oil
- 30ml (2tbsp) chopped parsley
- 20ml (4tsp) lemon juice
To prepare:
- Cook the Dippers as per pack instructions
- Mix the salad leaves, tomatoes and cucumber together in a large serving bowl
- Mix together the capers, oil, olives, parsley and lemon juice and season to taste
- Quickly toss the salad with the dressing and top with Dippers and grated Parmesan
