Chicken Dipper Salad

Serves: 12
Preparation time approx. 45 minutes

Ingredients:

  • 60 Birds Eye Foodservice Chicken Dippers
  • 500g mixed salad leaves
  • 30 cherry tomatoes, cut in half
  • 2 cucumbers, cut into chunks
  • 4tbsp Parmesan (optional)

Dressing

  • 12 olives, sliced
  • 2 tbsp capers, rinsed (optional)
  • 60ml (4tbsp) olive oil
  • 30ml (2tbsp) chopped parsley
  • 20ml (4tsp) lemon juice

To prepare:

  1. Cook the Dippers as per pack instructions
  2. Mix the salad leaves, tomatoes and cucumber together in a large serving bowl
  3. Mix together the capers, oil, olives, parsley and lemon juice and season to taste
  4. Quickly toss the salad with the dressing and top with Dippers and grated Parmesan
