Caesar Salad With Chicken Dippers

Preparation time approx. 30 minutes
Ingredients:
- 1 bag of 60 Birds Eye Foodservice Chicken Dippers
- 2 large bags mixed green salad
- 5 thick slices white bread, cubed and shallow fried in 20ml olive oil
- 60g thinly sliced or grated fresh parmesan cheese
- 30ml (2tbsp) olive oil
- 30ml (2tbsp) white wine vinegar
- 30ml (2tbsp) fresh chopped basil
- Freshly ground black pepper
For the herb bread
- 2 large French loaves
- 90ml (6tbsp) olive oil
- 20ml (4tsp) mixed fresh herbs, chopped
To prepare:
- Cook the Chicken Dippers as per pack instructions.
- Mix with salad, top with croutons and parmesan.
- Mix the olive oil & vinegar with the chopped basil and pour over the salad.
- Prepare the herb bread by slicing the French bread lengthways.
- Mix the herbs with the olive oil and brush onto the bread.
- Place under the grill and lightly toast and serve with Caesar salad.
